Hamlyn's "200 Budget Meals" has fast become a favourite in our house. It is beautifully illustrated, with every single picture eliciting a drooly "oooh, must try that" response. As an additional benefit, most of the recipes clock in at less than half an hour, making the book a good, reliable source for quick, last-minute meals. We especially loved the mushroom and leek pies. As a great fan of pies, I used to get frustrated at not being able to achieve the right consistency for the filling. This, however, turned out absolutely perfect (though I did substitute cornflour for plain flour -- it just made more sense). I'm making the pasta with aubergines and pine nuts tonight, and I have high hopes for it.
Update: It was my husband who made the pasta dish in the end. He was a little nervous, having never cooked with aubergines before, but the clear directions helped him create a deliciously moreish plate of pasta. Two thumbs up!
