This is a geat sharpener for Global knives. Don't press too hard - gravity alone does the work. Do it little and often.

Bought one of these after buying a set of Global knives and wanted to keep their razor like edge. After researching I opted for this sharpener as I'm not risking learning to use a steel on my lovely knives...and this was cheaper!!! This sharpener is easy to use, fill up the reservoir, and gently draw the knife though a few times! There is also a 3 wheel version available now, but not sure if it's a marketing gimmick to differentiate from an already perfect product, (and haven't tried it!).

Had a set of Global knives for a 'big' birthday recently and bought one of these ceramic water sharpeners after reading various reviews online. I have to say it's just fantastic - the Global knives are incredibly sharp and it's also done wonders for my old set, much better than other more expensive steel-based sharpeners I've had. Buy with confidence...

I have been using one of these on my knives for years, and it works perfectly. I cook A LOT, and after years of daily use my Global and Henkels knives are all still razor sharp.The only reason I give it 4 stars is that occasionally the wheel pops out of it's support. But this is a minor gripe and only takes a second to replace. Make sure you hold the knife flat and straight in the sharpener, and don't press too hard, and you will have razor sharp knives too with very little effort. I sharpen mine on the fine wheel about once every week (it only takes a few seconds) and this way they keep the perfect edge.

this sharpener is brilliant. I use it to put a perfect edge on my Deglon Sabatier professional and my Victorinox cooks knives. When using it with the Sabatier knives the plastic guide has to be removed, as the guide will not allow the slight ridge where the heel and bolster of the knife to pass over the sharpeners, and since Wenger, Gustav Emil, and Wusthof Trident knives all have a similar heel/bolster ridge arrangement you will not be able to use the guide with them, so some care will have to be taken in sharpening them. The sharpener takes well to the Victorinox knives, especially the larger cooks knives, and since these knives are of softer steel, the edge this shnarpener puts on them is amazing.
This sharpener is to be used to replace wet stones in shaping the edge, rather then steels to hone the edges of knives. This means that when in a professional kitchen I was using this sharpener once a week for edging my knives, and my whole box of knives would be done in just a couple minutes. The edge this sharpener leaves even looks beautivul, look at your knives side on, and you will see a perfect 1mm edge running down your blade, and look down on the edge and you cant see it at all, this perfect edge makes it so easy to keep sharp with a steel.
There are 2 reasons why i had to give this sharpener only 4 stars. The first is that this sharpener is not good at all at giving a god edge to the point and very extreme tip of a knife, meaning some out there wil still be getting out their wet stones for these parts of their knives. The second is that with my thinner more flexible knives like filleting knives just wont take an edge from this sharpener, think they are just to thin to rub against the wheels propperly

Having always used a steel to sharpen my knives I recently found out that this process removes some of the metal of the knife in the process and having just been given a Global knife, I was recommended to try a whetstone of some kind. This product has very detailed instructions on the box and is very easy to use. I was initially concerned that I had not received a "Global" branded product as the box is entitled "MinoSharp recommended for Global knives" however it appears that "MinoSharp" is a Global product according to other web sites. Definitely recommend this product.

Excellent sharpener for Sabatier as well - my partner cut his finger - well someone has to when you suddenly have a sharp knife in the kitchen.

This is the second of these we have bought. The first one we had for a long time and eventually needed new abrasive wheels.It was cheaper to buy a new sharpener. Expensive but does an excellent job. If you need sharp knives buy one.
