I have quiet a few global knives and have always been happy with the way they hold their edge. A few strokes of a steel and they are very keen again. They are light and strong with a good balance.
But the handles are too small so you end up holding onto the blade while this gives you good control your fingers start to hurt after long usage. To the point of blistering or in my case a huge callous on your finger!!!
If you are a casual home cook then these knives are great as they stay sharp for ages and you can show off to your mates!!
But if you are professional like me and you are prepared for tough skin fingers then they are good. But there are knives that cost less that are more comfortable to use!!
