Baking is Dean Brettschneider's passion. Trained in New Zealand, he is currently based in Shanghai. Many of the recipes take a traditional delicacy from one side of the world and add a twist from the other side of the world - like Green Tea Madeleines, Chinese Five Spice Chocolate Almond Macaroons or Red Bean Lamingtons. Other recipes come straight from the country of origin, like Almond Croissants, from France or the good old Kiwi Mince and Cheese Pie.
About the Author
Dean Brettschneider is a professional baker and patissier. After completing his apprenticeship in New Zealand he worked in the US, Britain and Europe, gaining experience in all areas of the trade, working in exclusive hotels, supermarket bakeries and alongside some of Europe's leading bakers and pastry chefs. Dean now works around Europe and Asia Pacific as BakeMark International's Technical Account Manager. He travels to major bakery expositions throughout the world to ensure that he is up to date with all the latest innovations and bakery trends.

Global Baker is a really interesting book of tweaks on classic recipes. The Asian influence is the predominant one.
The accompanying DVD is mostly a follow Dean about for a day in China piece and a bit too self promotional to watch more than once. BUT in the techniques chapters, there are a few baking techniques (like using your hand to do the final mix in of flour for a genoise sponge cake) that are fantastic to see demonstrated (and are not written about in the book).
Most of the ingredients are readily available although a few will require more adventerous shopping.
This is not a great introduction to baking. What it does offer is some ideas on how to take basics into new flavor territory.
The Amazon price seems good. I paid $AUD50 a couple of months ago for this as a paperback in a local Australian bookstore.

Excellent Baking Book!

This is a great read and very informative book! I've been baking bread for 26 years and still learned lots of things I didn't know. The recipes are easy for even a beginner baker who wants clear,concise directions for hand kneaded breads with great photos. I can tell that Dean is a master baker who loves what he does and puts his hands, heart and soul into his creations. The recipes are wonderful - can't wait to try them all out. And I haven't even watched the DVD yet, but look forward to more excellent tips. This is a must-have for any baker's library.
