Marvellous to find a dedicated game book once again. There have been a few bibles in the past, but they went out of print just as a wider public began appreciating the pleasures of game. This book gives you the confidence to choose game and to keep it to the right level of rottedness, to pluck and draw, to use the gizzard and giblets, to drain blood to make sauces and gravies, a truly excellent volume for the non-Tesco cook.
