As a semi-pro cook, I have owned Henckels, Sabatier and Victorinox knives which I thought were superb. After several years of deliberation (mostly over price) I finally bought a set of Globals and can say without hesitation that they are the best knives money can buy.

The GS-5 chopper is probably the most used of my 12 knife set. The depth of the blade and razor-edge retention make it a joy to work with when chopping large or small quantities.

As with all Globals, it is light well-balanced and comfortable but with presence in your hand and the smooth contours make cleaning a doddle (I simply run mine under very hot water immediately and wipe dry.

I have no doubt that this knife will be with me for many years to come.

This knife is very different from what usually passes with that name.

If you want to chop onions finely you take half a peeled onion and make a series of cuts than run from top to bottom, then turn the onion through 90 degrees and cut across - each slice produces lots of tiny cubes of onion. Problem is the cross cuts tend to push the onion out of shape and you struggle. NOT with Global knives and especially this GS-5. Its razor sharp and cuts with very little pressure.

Ordinary knives aren't so bad, unless you hit your hand quite hard with the blade you won't do much damage. With a Global knife it would be a trip to casualty and stitches. Treat them with respect and they will do jobs you can't do with ordinary knives.

Oh, and watch out, buy from a reputable seller, they are widely counterfeited. Some auction sites have 90% fakes. So if you think you've found a bargain be very suspicious!

This knife is fantastic for chopping. I first tried it on some potatoes, and it glided through them with such little effort, it felt like they'd already been cooked! However, this incredible sharpness can be a problem when you're an amateur like me! When I used it to chop some parsley I sliced off part of my fingernail on my index finger. Luckily it wasn't too large a piece, and didn't hurt, but it could easily have been a lot worse. I've since learned a new technique for finely chopping herbs with the GS-5: the blade has a slightly curved edge so it's possible to hold the knife by the handle, put the other hand on top of the blade (blunt side) and rock the knife backwards and forwards over whatever it is you're chopping. This way the blade gets nowhere near your fingers!!

Coming from the type of cheap argos etc knives most people use these knives may seem incredibly good. They are pretty decent, but not better than other similarly priced knives I've used. Knives are always a case of personal preference, with respect to weight and handle shape etc. I don't particularly like the handles but I do have quite big hands. With the larger knives I've had painful blisters on my index finger from prolonged use (I'm a chef) but not with this size. It is the weight, or rather the lack of, that I don't personally like. A light knife may be good for chopping herbs, filleting fish and other delicate jobs but I much prefer a more weighty European style knife for everything else. In essence, globals feel a lot less 'solid' and well made than many similarly priced alternatives. This is doubtless due to the fact that the standard ones aren't fully forged with a one piece tang right through the handle like you would find in a Wusthof or good quality Sabatier knife.
The blade itself takes a good edge but doesn't hold it for long. From whetstone and regular steeling, both the globals I have (this one and the G5) have noticible wear on the blade from about 18 months of use. I can get a better edge on my Wusthof knives, that lasts longer but it's maybe a bit more difficult to achieve. Globals do sharpen easily, which is a plus if you're not too confident with sharpening yet.

Overall I'd say globals certainly aren't bad knives but they aren't the best either, as is often suggested by their marketing and reviews from people with limited experience of the alternatives available.
As always, try lots of knives before you shell out- for the price I think there are numerous better options, particularly Wusthof, or IO Shen if you like oriental style knives.

If you only ever buy one knife it should be this one. My mum bought this for me as a house warming present. In my opinion Global produce the sharpest most well balanced knives - ever!

You barely have to put pressure on the handle to cut through potatoes, carrots, or any other root veggie. I have used it to cut through a frozen shoulder of pork that wouldn't fit in my largest tupperware and it was as easy as slicing through a parsnip. I do have to warn you though - They are far sharper than your average knife and should be used with respect at all times.

It stays sharp for ages and is really easy to sharpen with a Shinkansen Ceramic Sharpener.

I have since bought a few other global knives of varying size and shape but this remains the most used and best knife in the kitchen.

this is my first quality knife, and i couldn't believe how sharp it is. you have to concentrate like nothing else.
it does make life a whole lot easier though, and cuts through veggies like they are soft butter.

got mine from Giltsharp, and delivery was quick, so no complaints there.

i'm going to have to get a different shape knife though, as this one doesn't have much of a point on it, which i find i miss occasionally, but that doesn't take anything away from the GS-5, I chose that design for a reason.
just got to decide which one to get next! probably the G2 or G58
