The GS-5 chopper is probably the most used of my 12 knife set. The depth of the blade and razor-edge retention make it a joy to work with when chopping large or small quantities.
As with all Globals, it is light well-balanced and comfortable but with presence in your hand and the smooth contours make cleaning a doddle (I simply run mine under very hot water immediately and wipe dry.
I have no doubt that this knife will be with me for many years to come.
If you want to chop onions finely you take half a peeled onion and make a series of cuts than run from top to bottom, then turn the onion through 90 degrees and cut across - each slice produces lots of tiny cubes of onion. Problem is the cross cuts tend to push the onion out of shape and you struggle. NOT with Global knives and especially this GS-5. Its razor sharp and cuts with very little pressure.
Ordinary knives aren't so bad, unless you hit your hand quite hard with the blade you won't do much damage. With a Global knife it would be a trip to casualty and stitches. Treat them with respect and they will do jobs you can't do with ordinary knives.
Oh, and watch out, buy from a reputable seller, they are widely counterfeited. Some auction sites have 90% fakes. So if you think you've found a bargain be very suspicious!
