A one-piece, solid metal design, the 18cm Chopper is deceptively light and slim bladed. Compared to most of the large choppers on the market, it is the lack of weight which you first notice. Don't assume you'll have to press or chop harder when using it: its balance is really sweet - if you're used to a heavier knife, getting used to the weight can be a bit daunting at first, but persevere, you'll find the cutting is deceptively delicate, if a matter of confidence in the first couple of days.

I'd never used a chopper before, had confined myself to the use of the traditional cook's knife. The chopper makes a valuable addition to your range. It slices vegetables beautifully, and you can quickly adapt your cutting style to chop with speed and safety. It's more effective and more adaptable that the cook's knife. But, of course, with anything as sharp as this, take your time and rehearse your technique while you get used to the weight and feel of the tool.

From a safety viewpoint, even when wet, the handle is safe and non-slip. Because this is a single forging, there is no danger of the handle coming loose, or of dirt building up in the joints - cleaning is much easier ... but avoid dishwashers, they destroy edges! The handle is cold to the touch but rapidly warms and is very comfortable in use. It also feels slightly slimmer than, say, Sabatiers, so may suit smaller hands.

Although a one piece, there is little danger of your hand slipping onto the blade edge - although the blade does not curl back towards the handle (Global use this design in their cook's knives) , the blade is so broad it would be difficult for your forefinger to slip onto the edge. If I do have one criticism, however, it is that the corner of the blade, facing towards the handle, is very sharp, and it is quite conceivable someone could cut themselves on it - though the risk must be tiny.

The cutting edge, of course, is superb - tempered, hardened, stainless steel, compared in the adverts to a samurai sword blade. It keeps extraordinarily well. (Use a soft plastic chopping board, not a metal or glass one!) Global recommend that you use a water stone or ceramic whetstone for occasional re-sharpening - this buffs up the edge. Using a traditional steel can bruise the metal and actually make the edge more fragile. A stone polishes the edge down to an even sharpness.

And I've taken advice and bought a magnetic strip to hang up my knives - if you are going to invest in a high quality blade, take care of it and don't chuck it in the kitchen drawer where its edge can get damaged. Of course, if you have young children in the house, make sure all knives are safely locked away. Used properly, this is a superb tool, but grabbed by curious young fingers, the edge could be unforgiving, and it must be a tempting shape for young hands to toy with.

This is an extraordinarily beautiful tool. As a practical design, I am absolutely confident of its quality - I think it looks great, too, but that really is a matter of taste.

Hello all,

A few facts about Global. These knives are NOT one piece! By their design you would assume they are fully-forged, they are not. There is a weld between the handle and the blade. Hence, a very weak spot. Many Globals break in half due to being dropped. The first thing a knife buyer should look for is fully-forged or a one piece knife. These are not. Also, the handles are style over function. If you use your knife a lot, you will get 'Global finger'. Ouch. Thirdly, Japanese steel is super sharp due to the fine angled edge. The steel is very hard to keep sharp. I recommend regular use of the water wheel sharpeners for these knives. Don't let your Global get dull, or it is hell bringing it back.
When Globals came on to the market 15-20 years ago, they were all the rage. Professional chefs such as myself would not touch these now. If you want superior knives, use Robert Welch Signature Series at a fraction of the price or Wustof Grand Prix range. I feel Japanese knives excel when you get into Doi, Watanabe, Tojiro etc. Again, bear in mind Japanese steel is harder to keep sharp. The great thing about Robert Welch is that it is a Japanese angled edge on German steel...the best of both worlds.
People need to wake up! Globals are simply not the best especially for the exorbitant price.

Form over function 2 April 2010
Global seem to have an excellent reputation in the home use market, but actually quite a poor one among professional chefs. I bought this knife and the 14cm version when I started as a chef and went to work thinking I had the best knives you could get, immediately people commented that I wouldn't like them. The blade does take a pretty good edge, but nothing exceptional. You can get them very sharp quite easily with a whetstone and a ceramic steel but this never lasts long and I find myself constantly using the steel to keep it. The major issue I, and everyone else in the kitchen that has used global (most of them!) have is the handles. At first they seem great, but when you use them for hours at a time a painful blister/lump develops on your index finger. The way I, and obviously others, hold them is perhaps not the way Global intended, but feels most natural and gives more control. It's not just a case of getting used to them as I've used them for nearly two years now and still get this. If the handle was different I would have given then 4/5 as they are good for chopping large volumes of veg with precision. I think a lot of people buy them because they look so nice and are marketed very well, but for the fairly high price tags you can do better; Wusthoff, IO Shen and Stellar Sabatier (less than half the price on here) are all at least as sharp, last easily as long and are much nicer to have in you hand all day.
For a modern looking home kitchen they are pretty cool, but for heavy use look elsewhere!
