Highly recommended 30 May 2009
Format:Paperback
I borrowed this book from the library while looking for a good book on Moroccan cookery. There were a few on the shelf but this looked the best. I have cooked several meals from it already and intend to buy a copy for myself. The book is well organised, with a basics section followed by recipes grouped into catagories such as salads, lamb, desserts etc. All the recipes are clearly described and while not all are illustrated, the photography is excellent and inspiring. Unlike some books on Moroccan cookery the recipes don't use ingredients that are difficult to obtain. The food is very light and fresh, and the combinations of spices and herbs give it a flavour different from European/Mediterranean cuisines which makes a welcome change. I have seen books on Tagines and while some look excellent the beauty of this book is that it allows you to create a whole meal by combining various recipes. I'd recommend it to anyone who wants to try Moroccan cooking.

Like one of the previous reviewers I first saw this book in the library and my husband decided to buy it because he liked it so much. He has cooked a few of the dishes now and as a novice cook has produced some of the most tastiest food I have ever had. It was the lamb and aubergine dish which all our guests who have tried it have fallen in love with. The chicken and chickpea tagine is gorgeous as well and the harrira is a regular in our house. The authour is informative about the health benefits of the food and the anecdotes are a nice touch. My only gripe is with the pictures of food, what we make from the book never looks like the pictures and with it being a book on unfamiliar food I think there should be an accurate picture of the finished dish.
It is not the easiest cookbook to follow, it would be better to list the ingredients and the method can be a little confusing at times. However we overlook these things because the dishes are lovely to eat.

I like to try and source recipe books that show me authentic and successful recipes that are flavoursome and impressive. this book delivers on all accounts. the ingredients are all basic and easy to find, except orange flower water, which i had to buy online at asian food supplies, however i'm recently told waitrose now sell it. its used in alot of the recipes. even the salads in this book are interesting and incredibly tasty. no more excuses for serving a basic green salad with cherry toms darted all over it. this book will have any tastes loving salads and easy light meals. the methods it describes are unlike any i've ever encountered but not to be dissuaded by, just different thats all. extremely tasty full of flavour menus from this book. they all work too! the titles of each recipe sound bland but try them and you will NOT be disappointed. our particular favourite in the family is chicken with couscous and onions (i know, sounds dull as anything doesnt it?! but nope) oh and you'll really learn how to work with plain couscous in this book. never again will i cheat and get the sachets of ready seasoned stuff etc. summary: fantastic wow factor cheap to make recipes! healthy too. very!

All can be done.
Book quite readable, recipes useful, although all moroccan books say use a tagine, BUT all can be done in a slow cooker. Enjoy.
