About the Author

After training as a chef, Jane Hornby worked as Food Writer and Food Editor for the BBC's bestselling Good Food magazine for five years. The magazine is renowned for its clear, step-by-step style and for its foolproof recipes that are tested many times. Jane has also edited several of the BBC Good Food's bestselling 101 recipe books. She is author of 'What to Cook and How to Cook It' (Phaidon, 2010). She has also appeared on national television shows such as The Martha Stewart Show. Jane lives in London.

I hadn't cooked anything properly in years, and having gotten married last year felt embarrassed by my lack of skill in the kitchen: particularly with a partner who can open a fridge, grab a few ingredients, and cook up restaurant-quality food without breaking a sweat. Boiling a pack of fresh ravioli and putting a bit of parmesan on top wasn't quite cutting the mustard, and so I really needed to up my game.

I ordered this book having spent the past six weeks cooking more than half of the recipes in Jane Hornby's previous book, What To Cook & How To Cook It. My problem with most cookbooks is that they can sometimes fly through the description and at most show a picture of the final dish. As an unconfident cook, I'd always be left asking "well how will this stage look when it's finished cooking?" and "chop how finely?"

The beauty of this book and the last one is that each recipe is spread out over four, image-heavy pages. Nothing is presumed, and everything is explained with care. For the questions I might have above, there's a picture of every stage. It's just perfect. It's giving me untold confidence. I've cooked six things from this book, and every single one has turned out wonderfully. Best of all, cooking is no longer a stress-filled 60 minutes with a disappointing result - it's 30 minutes, entertaining, fun and educational and my partner has been blown away by the change in my cooking. I'm loving being back in the kitchen and I have Jane to thank for it.

The main difference between this book and the last one is that there is more social food (picnics, barbecues, food for friends), that it's seasonally focussed, and that it's a fair bit healthier than the previous book. I have to say that after using three-quarters of a litre of double cream making a delicious key lime pie from the last book, me and my partner's waistlines are pleased to see a lot more healthy options this time, whilst still managing to make me coo over at least 90% of the recipes.

For some odd reason, though I pre-ordered the book and expected it late April, it arrived early April. Thanks Amazon!

The first thing I want to see with any cookbook is the recipe list - so here's the whole thing for you. Hope it helps, and trust me when I tell you to buy this book if you are anything like me in the kitchen. You won't believe what you can manage with the right cookbook.

Jane Hornby has followed her book for less confident cooks, What to cook and how to cook it, with a healthier, seasonal sequel, with more recipes for picnics and dinner parties, What to cook and how to cook it: Fresh and easy.

Like the previous book, Fresh and Easy is aimed at demystifying cooking, with numerous photos illustrating every stage of every recipe. It's a format that does result in a pretty big book - 350 pages for 77 recipes, but it does mean that it's always quite clear as to what has to be done next, and how things should look whilst being prepared and cooked.

Like her previous book, this is a great book if you're not an habitual cook, enabling you to produce great looking and tasting food with assurance. The food for friends section in particular contains many recipes that look like they deserve trying: herb crusted lamb with pea puree and tomatoes, and the pulled pork sharing plate, for example. Likewise, from the barbecue chapter I fancy spicy mackerel with orange and radish salad, chimichurri-style burgers, goat cheese and polenta stacks and finally chargrilled beef and vegetables with horseradish cream.

This is the first book where, whilst trying a recipe, H hasn't made any "how about you..." or "you know, you could...." suggestions after I've produced the dishes, which says something about how easy the recipes are to follow and produce attractive and tasty food.

Prior to owning this book my skills consisted of meat under the grill, anything that would go in the oven (mostly from a packet), stir fry, and the odd pasta dish.

The great thing about this book is that you see an image of all the ingredients on the page prior to starting, with a list detailing the quantity. Then on the following pages you get just enough instructions that you can follow through. No "I wish I'd started part 3 earlier" scenario. You also get images showing how it should look as you go along as well as the finished dish.

For anyone who'd like to have ago but is worried about making a mess of things this book is perfect. My last dish was tuna steak based which when finished looked almost identical to the picture in the book. It tasted absolutely fantastic. I'd be happy to do that one again for dinner guests.

Though this was actually given to me as a present, so I don't know where it was bought, I had to add a review, it's that good. I'll certainly be buying Jane's previous book.
