Book Description

'An engaging personal collection of recipes from one of the tastiest and most refined cuisines.' Claudia Roden

Product Description

The food of Lebanon has long been rated as one of the great cuisines of the world. Healthy, simple to prepare, full of fresh flavours and sensual aromatics, it makes great use of grains, vegetables, pulses, fruit, nuts, grilled mead, fish, olive oil and yoghurt. In this evocative new book, Nada Saleh, a trained nutritionist and talented cook, presents 200 imaginative recipes from her native Lebanon.

Throughout she draws upon her many happy memories of a vibrant and sun-baked land - the family occasions when they ate in the shade of the poplar trees, enjoying mezze (traditional appetisers), meshwi (grilled meat) and locally grown fresh fruits of the season alongside delicate sweet dishes, washed down with Turkish coffee. From tempting vegetable and salad dishes like Yoghurt and Spinach Salad, via delicate Cod with Tahini to enticing Upside Down Aubergines, Stuffed Meat Roast and mouthwatering Walnut, Pistachio and Date Pastries and Molasses with Sesame Cream and Fig Jam, this charming book is a joy to cook from and is suffused with warmth and love for a distant land that, even in adversity, beguiles and inspires.

The book is packed with delicious recipes such as:

Walnut (dip) with cayenne, Fragrant pomegranate with pine nut salad, Stuffed meat pot-roast, Sultanas and raisins in fragrant water and Thyme bread. Also included are the better known dishes such as tabbouleh, falafel etc.

The recipes are arranged as follows:

Salads, Vegetables and Grains
Bread
Soups
Fish
Poultry and Eggs
Meats
Stews
Yoghurt
Conserves and Jams
Sweets
Pickled Vegetables
Sauces

Each chapter is preceded by narrative about festivals and how particular types of food 'fit in' with everyday Lebanese life. For those you who like glossy photographs of the recipes then this book will be a disappointment to you as there are no photographs. However, the recipes are appetising and for me, that is more important than colour pictures anytime. An excellent book.

great but no pictures. 15 July 2010
Format:Paperback
there arent any pictures at all in this book, so nothing to look and drool over as you peruse the menus and ponder on what to make, instead you really have to read through them all like a story, in fact, like you're about to actually make them. only then will you know whats for you. however, as a simple english eating family we/i use this book alot. the recipes are all super and they all work and so you cannot go wrong. but if you're after pictures to whet your appetite then you'll be saddened by this book. instead though, why not trust the creator and the reviews and go for it. you'll not be disappointed. i think the creator knew this when they set out to do a book, by the time you've flicked through it too you'll know and realise why pictures are not necessary.
