This is a gem of a book. We are privileged that Erhard Loffler decided to share his years of technical, professional experience and domestic experiments (humorously told at times) with us and went to the trouble of writing this book. Very informative and interesting read. A lot of potential for the home cook to produce "fantastic roasts overnight", save a lot of time and make even more of the kitchen. Thoroughly recommend.

Worth £4. Charmingly halting English did not detract from the scientific approach to the merits and safety of low temp cooking.Not very long but sufficient to start me off.....wish understanding the instructions on my new hi tech oven were this straightforward! Will definitely try the crispy pork crackling and will hopefully be unrecognisable as in general I dislike the stress regarding timing for huge roast meals....

I ordered this book yesterday and was so curious that I had to make a "test-run" immediatly.
So I skipped a few pages - containing only the background information - and tried to make the Bavarian "Krustenbraten" (pork roast with crackling)(which you can see on the front page). I was a bit skeptical to do it over night, so I started in the morning. The result was just amazing. I never had such a tasty and juicy meat before and the crackling was almost like on the picture.

So why only 4 stars? The content is great but the layout is not the best looking one and in my opinion the pictures could be a little bigger. (Though I like the fact that they are not "photoshopped")
