This is the first recipe book where I've found Tofu Fudge! Here, too, is a recipe for a Kahlua Shake, Creamy Eggplant Soup, Mushroom Dip, Salmon Spread, Tofu Brownies, Pumpkin Chiffon Pie, Crab Souffle, Tofu Moussaka, Tofu Meatballs (including ground beef), Tofu Meatloaf (with ground pork and beef,), Apple Cake, Carrot Cake, Eggplant Lasagne, Tofu Stroganoff, Meatless Tofu Balls, Tofu Spanakopita, Barbecued Tofu with Vegetables and endless other tasty dishes. I never would have dared to cook with tofu until I found this cookbook. It has so many great (and weirdly delicious) recipes for tofu. It helps to break tofu out of the stir fry rut and shows other ways to use it.
Eng Tie Ang has obviously dedicated her life to food, and it shows in these books. The recipes take a few short cuts here and there, but the quality doesn't suffer as a result.
