My father was diagnosed with diabetes when i was younger, he followed the diet carefully but after a few years he slipped and stopped being so careful about his food. I am now 17 and enjoy baking but became frustrated that nothing i baked was appropriate - he is now back on the diet and doing better than ever. I wanted to be able to make a dessert that my whole family could enjoy and so i scoured Amazon looking for a good book. It was not that he felt left out, more that i wanted to have the choice to include him. However, very few recipe books had any reviews so i took a shot in the dark and bought this one.
I have had the book 2 weeks and made the ginger cake with fresh ginger and the cranberry muffins with a hint of orange. Both recipes were easy enough to follow and came out looking pleasant. I was happy to discover that the desserts were yummy enough for the whole family to enjoy and i now plan ahead for treats for the family with the confidence that my father can join in. The book has alot of nutritional information and, though the portion sizes are a little strange i recommend it highly. The only crticism i have is that the book was originally amercian so some of the measurements and products are a little off. All the ingredients so far are readily available but may require a little translation.
Hope you enjoy
