I found this cookbook to be very helpful in finding recipes for health-minded individuals without being too extreme. It concentrates on whole foods, natural substitutes, good nutrition, etc. I have recommended it many of my friends.

One of the all time great books on healthy eating. I have used mine since the 70's. The recipes are simple to make and DELICIOUS. After my initial use of this book I started grinding my own flower and making pasta from scratch. I've been doing those things ever since. A great followup book to this one would be any of Katzen's Moosewood cookbooks which also contain healthy cooking in more advanced recipes. Both books are also great for meal planning.
