This book should be in every kitchen it is great. Bought this a few years back as I decided to have a go at cooking curry at home having just returned from a trip to Cambodia, Thailand and Vietnam. The book is well illustrated and at the beginning of each chapter tells you what the common ingredients from that region are and tells you a bit about them. I personally cannot cook from just text i need a picture to guide me and let me know if it is turning out right. This book has lots of beautiful photos but they are in proportion to the written recipies so you dont end up flicking through a photo album. This is now my cooking bible and i cook from it about 2 times a week, every week.
Some of my favourites are the Chicken curry with sweet potatoes and carrots (always a favourite when guests are staying for tea), Madras curry (husbands favourite), prawn balti (husbands other favourite) and the green prawn curry with fresh dill (stinks when cooking but tastes amazing!). I found a lot of the recipies dont include veg but i always add 2 peppers and a corgette to them where appropriate as this helps bump up our 5 a day. I also dont like cooking with Ghee and will use vegetable oil instead to make it healthier although not all recipies use ghee anyway. For the madras recipie like some (but by no means all) others you have to make a spice blend but to save time and cheat i bought a big bag of madras spice from the shops as i just dont have time to stand and toast spices. If you do and find you are doing the same recipies over again you can make a lot in advance and them put into batches to save time at a later date.
I have many more pages that have sticky notes attached to remind me of all the other yummy looking things i have to cook still. I could not recommend this book more!
