The original Cordon Bleu book in the penguin series was the best cook book ever, with some close competition, but it required a basic skill to get the best out of it. This book assumes nothing and gives pictures to illustrate and show techniques.
For the beginner, the best there is.

I've had this book for more than 15 years and it's my absolute favourite. It's a must for the novice cook. I highly recommend.

I will never again wonder what something is or how to cook it - or indeed how to make such things as pasta, creme fraiche, gnocchi and a million other things which I thought appeared on shop shelves by magic until now!

Le Cordon Bleu is possibly the most famous culinary school in the world. They have a wide range of publications out there that are iconic.
This one in particular is very basic. I don't know if it's the complete techniques, but I think from a French cooking point of view, then it could be. It even tries to include some directions on Asian cooking, which I appreciated greatly.
What leaves to the desire in this book is the lack of fitting description. There's only so much you can take from pictures, since they only capture one moment in a range of processes.
Still useful and a good basis to begin building your cooking technique knowledge from.

I bought this book as my sister-in-law has one. It was amazingly good value, in excellent condidtion, and is used on a daily basis. I love it! A must for any amateur cook who wants to know the secrets of a lump free sauce and how to pack flavour into the simplest of things.
