Paul Higham is a retired Chef who has experience of working in many restaurants of all kinds in the north of England. He is interested in all food writing especially food history and is currently writing books on the history of British Cuisine.

Apart from working as a chef, Paul has worked on the airlines as cabin crew and is currently working in IT for the travel industry. However, food is his passion and his books will helf to reflect that.

Take it from someone who has worked in several takeways - this book doesn't give you the real deal on take out such chinese food. Overcomplicates some recipes (mushrooms in chicken fried rice? please...) and tries to cover too many meals I feel.

The recipes will be tasty, no doubt. Just not the same as from your local take away, which defeats the object of the book.

A great no nonsense guide to cooking Chinese food "take away" style. I've tried 3 of the recipes so far and I'm very impressed by the results. The dishes really are indistinguishable from what you'd normally get from your local take away, so much so that my girlfriend accused me of lying when I treated her this weekend to my (homemade!) Chicken in Yellow Bean Sauce. The cheek!

The teriyaki recipe was honestly the nicest I've ever tasted, so easy to make! My family meal repitoire just got a whole lot more interesting and now everyone wants to come for dinner!

A very basic book, hardly inspiring. Most of the information in this book can be got for free on the internet. No pictures and a very poor excuse for not having them. I think I will stick to the web in future.
