The structure of this book makes it very easy to follow. There is indepth theory on the methods of cookery at the front of each chapter which gives essential guidance to the reader. The recipes are clear and easy to read with the choice of making four or ten portions of each dish. The lack of photographs is made up for by the simplistic language used to describe the methods for making each dish. Overall an excellent book for the beginner.
