What are Devro Collagen Sausage Casings made from ?
Devro collagen is devrived from the middle corium layer of cattle hide which has been obtained from hides by the mechanical removal of the epidermal and flesh layers.After a pretrearment,the collagen-rich corium layer is referred to normanlly as the limed collagen split.
From Collagen to Devro casings...
The process involes an extensive washing,decalcification and buffering process of the limes collagen plit to give a purifed food grade collagen material.This is further reduced into a fibrous slurry which is blended with a food grade acid and vegetable cellulose fiber to produce a homogeneous collagen protein gel.The collagen fibers are arranged to give a crisscross structure which contributes significantly to the strength and caliber staility of the finished Devro product.
History of Devro Collagen Casings.
Scientists discovered that the naturally occurring protein-Collagen- could be broken down and reconstituted into an extrudable mass which then could be formed into a tube or casing suitable for use in sausage manufacturing.Sausages produced by this method are easier to pack than those in variable animal casings due to their uniform size and weight which is advantageous in both retail and commercial markets.

We made some excellent sausages using these collagen casings. The size is just right for normal dinner sausages.
The advantage of these casings is that they can be stored for a long time. They have the disadvantage that they tend to unwind after twisting to separate individual sausages. This can be overcome by careful, slow, cooking and by having no more than four sausages in a string.

Fast and first class service, excellent product, I am a first time home sausage maker, but I did make sausages for a shop 45 years ago,this product made the process much easer and cleaner than it was then,and the end result was excellent. I would recommend these collagen casings to all.

The photo is misleading. You only get two "tubes" sausage skins for your GBP 5.99.
The material is good quality but does not seem like 5.99 quid's worth.
