I bought this with a certain amount of trepidation given some negative reviews about products from the same source. I love this toy. It does takes a little time (5 minutes) to master drawing the knife through the sharpener but my knives from 10" SWIBO Chefs knife to 3" Kitchen devil professional paring knife to Chinese cleaver (no 2) are now razor sharp.

I'm a keen amateur cook, but can't master using a steel to sharpen my (good quality) knives. For years, I've topped 'em up with a whetstone but they've deteriorated to the extent that I was considering a new set (big bucks). Enter the Chef's Choice Diamond - all knives are now so perfect they need a health warning. The 3-stage process has given my knives a totally new lease of life, and they're now, if anything, better than when new. It's also rejuventated lesser cooking knives, and pocket knives. This device is very well worth the purchase cost - it's dummy-proof (me) and works miracles. First stage brings back the proper grinding angle (use once every kidney-bean season). Second stage puts the sharp edge on (use every few weeks as necessary) and the third stage - use weekly - makes razors of them !

After hours of contemplation and reading peoples reviews on other types of sharpener, I decided to take the plunge and purchase one of these little gems................and I have no regrets. Well, maybe the cost, but there's no chance of any bartering with Amazon!
Anyway, back to the product review. I had been viewing the Chef's Choice 100 prior to purchasing. This is only a two stage sharpener, which compared to the three stages on the 110. I'm glad I went with my choice as I doubt a two stage sharpen would have been able to cope or give very dull knives (like the ones I've sharpened for my girlfriends mother!!) the results I obtained.
A little practice is needed to achieve no "chattering" of the blade as it passes the sharpening plates. But hang in there, don't get stressed, perhaps try using the coarser No.1 slot a little more before moving on.
If you have a little more money than I had at the time, maybe a quik look at the Chef's Choice 120 (avalible on other websites) might be in order as the blade of the knife looks to be held a little securer in the sharpening plates.
All in all, a valuable bit of kitchen kit needed for anybody who likes a sharp knife with little hassle.
