I borrow cookbooks from the library before I purchase them. That's how picky I am about which ones I want to own. This is the only Chinese one I've ever bought and it's all I need. Besides clear concise recipes, The first chapters are all about ingredients and purchased cooking items. Color pictures of all the available sauces and specialty materials make shopping easy. Plenty of variety and is divided into regional menues. I have purchased a number of copies as gifts for my family and friends. Highly recomended by me.

This is a terrific book for people looking for delicate and authentic tasting dishes. Recipes included in this book sometimes use quite a few ingredients (like peas, carrots etc for a fish dish), but they aren't hard to follow. The text is written in good English and easy to understand. One only need to keep a few common spices and condiments (such as potato flour, soy sauce) around for most of the dishes.
