There is nothing like a razor sharp knife in the kitchen whether cutting tomatoes or meat, bread or onions etc. But how do you get the perfect edge everytime, simple get the Chefs Choice Sharpener that is right for you. Chefs Choice use 100% diamond abrasive which ensures that blades are sharpened without the generation of heat which can distemper the blade. Quality knives have their blades hardened by tempering the steel which is a process where the steel is heated and cooled to exacting standards, if heat is generated when sharpening then this process can be reversed therby softening the blade, hence the advantage of using diamond as the abrasive.

The model 45000 2 Stage Manual Sharpener for Staright Edged Baldes enjoys the benefits of the diamond abrasive plus precision angle guides ensuring the perfect angle between blade and diamond every time. Stage 1 is used to hone "blunt" knives to get an edge after which Stage 2 further enhances the edge and prevents the edge actually folding over. When keeping the edge on an already sharp knife Stage 2 will be sufficient. For both Stages you simply draw the blade through letting the precision guides ensure that the right angle is maintained aginst the diamond.

    Maybe I'm too fussy, but I'm a cabinet maker, so I work with sharp edges; I count it as sharp if I can shave the hairs on my forearm with it. This device got the first few knives just about that sharp, but the tiny area of diamond actually doing the work means that it wears very fast, and it was very soon a lot less effective. If your knives are quite blunt, you'll quickly wear this out sharpening them; if they're quite sharp, it won't put a real razor edge on them; if they're somewhere in between, it'll improve them a bit.

    This sharpener is OK, but only if you have fairly sharp knife to start with. I had completely blunt knives and it wasn't able to restore a new edge on the knives. I would still recommend getting an electric knife sharpener by the same company. I have bought 4 different manual sharpeners over time and ended up buying the electric one anyway. So I wasted more money than I initially planned.

    Have used for a few days now much easier to use than a steel my new knives from richardsons, are very sharp after using this, only neeed to put thru roughly 20 times and knifes are sharp( this only takes 30 seconds ) All in all Brillant
