Yes! As I understand it you can reserve a small quantity of the culture to produce another batch, but I don't know how many times you can do this. Hope this helps.

Yes, you can use it for cheddar. Top tip: once you've made it as per instructions, freeze it in ice cube trays for future use (1 cube per batch). Happy cheese making!
