I read an article in Oct 3 Sunday Times STYLE section, p.75 "Steak out" and decided to follow "how to cook a steak properly".
It required using a cast-iron griddle. I found this one on Amazon and have been using it daily for almost a week.
It gives superb results if used properly. At first I was a bit hesitant to get it smoking as per instructions but that is how it's supposed to be (they never told me that in catering college some 30 years ago!) and once you get used to it it produces excellent results precisely because you can get searingly hot heat which stops the meat sticking to the surface...and that's how it's done, D'oh!
Forget trying to cook steaks properly in a non-stick pan - you cannot get that heat without damaging the non-stick surface (I guess).

I have never had a grill pan before and judging by the quality of this one, i don't think i will ever need to buy one again. Its transforming my cooking.

this is a useful sized cast iron grill, from Chasseur, in my favourite colour, the stunning colour of CHILLI RED.
A relatively heavy piece of cooking equipment, it has an assist handle, but being cast iron they can both get very hot, so don't forget your oven gloves.
My favourite recipe using this grill-pan is:-
'Grilled Lamb Steaks with a Crunchy Stir-Fry'
A medium hob-heat for my grill, then, when lightly smoking, I put on similar sized lamb steaks, which have a just a hint of garlic and rosemary and are already seasoned and oiled. I quickly seal both sides, then reduce my heat - frying up both sides for an average of 11 minutes - depending on the thickness.
In the meantime I have started to lightly fry some pepper and courgette strips in a separate pan and pop in a bag of bean-sprouts, cooking for about three minutes, as the lamb finishes off.
Served with some warm crusty French bread and butter.
This grill is currently also available in the regular Chasseur colours:-

COBALT BLUE

RACING GREEN
along with the getting hard-to-find, limited edition:-
PISTACHIO
Boxed, complete with cast iron instructions.

A fairly ordinary pan
The pan is OK and is a heavy cast iron pan that holds the heat. The main drawback is the fact that it is enameled on the bottom. This means that the bottom is not completely flat. Read more

Heavy but becoming essential equipment
Don't know about how you meaties cook, but my interest in this pan was purely in reducing the fat content of an occasional indulgence in fried vegetables. Read more
