The pot is so universal. Firstly it's easy to brown meat and fry things. Then you can add everything else for you casserole. Nothing sticks to the enamel either. Amazing!
It seems to be very efficent at heat retension too. When I use it on my gas hob on the smallest burner (on minimum gas) it is still too hot! I have to use a "heat diffuser". I've never had a pot this large that can stay that hot with so little heat. I quite often use the oven instead as it is cooler! The knob on top is heat proof to 200C which is as hot as you want.
Overal, I'm highly impressed.
There are a coupleof draw backs. Of course, cast iron is very heavy. When this is fully laden with food it could weigh about 6 or 7 kilos. You need to use oven gloves to touch it as it stays so hot for so long. It is fairly expensive.
I'm still very happy, hence five stars!
