The last reviewer has clearly missed the point and didn't do their research. When you get the pan food sticks to it, however over time the pan absorbs oils from the food which fills in the tiny gaps in the psurface leaving you with a smooth 'non-stick' finish (a patina).The first few weeks of owning the pan any attempt at cooking eggs meant lots of scraping up of egg to get it on the plate. Now, after just over three weeks the pan is completely non-stick, omelettes (and anything else) slide right off the surface. Don't bother using any detergents to clean the pan, they're unnecessary - simply fill the dirty (still hot) pan with hot water and leave it to soak for five minutes then any food leftover can be easily removed with a brush. If you treat the pan right for the first month, use it lots, only clean it with water, oil lightly before storing then in a few weeks you'll have a completely non-stick pan which will outlast any teflon type finish and without the health risks. Aside from that all the positives about cast-iron are true, it's an excellent pan, far better than my expensive stainless steel one and my old non-stick one which went in the bin. I give my Chassuer pan 10/10

Seriously good frying pans, I have three of these in different sizes, and if you 'season' them by coating with oil and sticking in a hot oven (200-220) for 10-15 minutes before first use you will be well on your way to having them really workable within a short space of time.The other positive reviews are correct, and these pans do build up a really good non-stick patina with usage and time so the 'seasoning' option is really just to get it going more quickly. Not sure what planet the one star review from Yorkshire must have dropped off as I also have some Le Creuset cookware and there is NO difference in cooking performance, none whatsoever!
