This is not your typical Moroccan cookery book as it is about French North African cooking, resulting in some very interesting recipes. The book has chapters as follows:

La Kémia (like mezze or tapas)
Salads
Vegetables
Soups
Meat
Chicken
Fish
Tagines
Couscous
Pastries and Breads
Preserves
Drinks

The recipes themselves are generally healthy and there are quite a few delicious vegetarian recipes, although some of the ones containing meat can be adapted. All in all, an interesting book.

Casablanca Cuisine, the cooking of French North Africa is the first original cookbook I have found in a very long time. It's terrific. Wonderfully exotic great tastes, easy recipes, lovely descriptions.

The mint soup is to die for. And the chicken with apricots were a major triumph. My guests actually believed I was a great chef. Fantastic!
