Book Description

4 Nov 2004

The Moro restaurant was born out of a desire to cook within the wonderful tradition of Mediterranean food, and to explore exotic flavours little known in the UK. It is one of London's most talked about restaurants and - unsurprisingly - Moro: the Cookbook was a huge success. Its passionate insight into the culinary traditions of Spain and the Muslim Mediterranean and its strong vision and ethos captured readers' imaginations. Casa Moro introduces an equally impressive quality and diversity of recipes that are by no means inaccessible to the average cook; ranging from Asparagus with parsley and almonds; Moroccan courgette salad; Partridge escabeche; Garlic prawns with white wine and chilli; Chicken with pine nuts, saffron and fino sherry and Chestnut, almond and chocolate cake.

Taking the range of flavours beyond those covered in their first cookbook, Sam and Sam Clark have created fresh and dynamic dishes that reflect Moro's ever-changing menu. Much more than a simple catalogue of recipes, Casa Moro evokes Sam and Sam's extensive travels, their first discovery of Spain and Morocco and their house in the heart of Moorish Andalucia, taking the reader on a journey that resonates with delicious dishes, history and tradition.

With an entire chapter dedicated to the ancient ways and cooking of Andalucia and, more specifically, the village in which Sam and Sam live, this personal, evocative account exudes romance and is written and designed with palpable excitement and elegance.

Review

"The best cookery books give you so much more than recipes: they tell the story of food, who cooks it and why. I loved the Moro Cookbook and was already hungry for second helpings. And this is a wonderful book, a pleasure to read and a reward to cook from. As More-ish as it is Moorish" (Nigella Lawson Evening Standard)

"deeply personal in the best kind of way...if it doesn't spur even more of us to buy houses in Spain then nothing will" (The Daily Telegraph)

"Fully the equal of the first Moro cookbook, it is both serious and seductive, packed with earthy recipes infused with smoke and spices" (Christopher Hirst The Independent)

"a proper cookery book, with recipes you'll relish reading and making" (Time Out)

"...quite the most exquisite, inspirational and downright delicious cookbook I have seen in ages" (Nigel Slater The Observer)

5.0 out of 5 stars Spot On! 29 Mar 2005
Format:Hardcover
I reviewed the original Moro cookbook less than favourably - I felt it was a case of poor translation of recipes from restaurant to domestic kitchen as it suffered from uneven spicing and some odd proportions. This could not be less true of Casa Moro which is now my constant kitchen companion - perhaps this one succeeds because it's what the two Sams actually eat at home. The recipes are enticing, instructions clear and the flavours gorgeous - oh take me to Marrakesh now!

My favourite recipe from far too many favourites is the subtle and enticing layered dish called Chicken Fattee - OK it's a comedy name to us unsophisticated types, but it's a dizzyingly rich and smoky dish which has the added virtue of amply feeding 8 people from one medium sized chicken. Yum!

5.0 out of 5 stars An excellent book packed with yummy recipes 3 Jun 2007
By Delilah
Format:Hardcover|Amazon Verified Purchase
I think this book has to be the best cookery book I have bought so far! The variety and amount of recipes is exceptional. Have cooked three so far this week alone, and was not disappointed. The Carrot Puree with Caraway and Feta is to die for! I never realised carrots could taste so good!

Casa Moro is an enjoyable read, full of easy to follow yummy recipes with nice colour photographs. I look forward to trying many more great dishes.

The only negative I would say, is that the dessert section leaves a lot to be desired. There are not many recipes and most are various ice cream dishes which if like me, you don't have an icecream maker are not much good.

Its a small negative, and overall I am extremely happy with my purchase.

5.0 out of 5 stars Yum Yum 4 May 2005
Format:Hardcover
In the first week of owning this book, I cooked 3 meals from it, and now, 6 months later there is barely a week that goes by without a meal either from or influenced by this book.

Most dishes are straightforward to prepare, even easy at times, and little is required outside the ingredients most enthusiastic cooks are likely to have.

I am now very much looking forwards to trying the many light summer dishes after having been on gutsy winter fare so far. Surely a book for all seasons. Prawns and Oyster mushrooms in manzanilla on toast makes for a hard to beat lunch!

5.0 out of 5 stars Makes me want to cook! 30 Nov 2012
Format:Hardcover|Amazon Verified Purchase
Choose this book after reading the reviews and very glad I did. Living in rural Spain and having developed a liking for the food means searching out cook books to use and this is one of the very good ones. The recipes work which isn't always the case in some books and the pictures are interesting but do not overwhelm the content.

5.0 out of 5 stars Wonderful dishes, consistent results 11 Sep 2012
Format:Hardcover
I received this cookbook as a gift, and after having enjoyed a meal at Moro one evening I decided I had try making some of the dishes myself.
To date, I've tried a handful of recipes including mains, breakfasts, starters, and sides - and all the dishes thus far have been totally enjoyable to prepare (wonderful colours and smells), some recipes often surprising in their simplicity, and the end results have consistently been full of flavour. Perfect meals to share with friends and family.
This cookbook has quickly become one of my favourites on my shelf!

4.0 out of 5 stars Good, Tasty Food made with Simple Ingredients 22 Oct 2010
By Sofia
Format:Hardcover|Amazon Verified Purchase
A had brought this book a couple of years back as a result of a holiday with my family to Morocco, all of whom loved eating dishes like chicken tagine and harira soup whilst out there.

This book is beautiful and some of the recipes are spot on for my family for instance;

Soup Dishes: Salmorejo - Thick Gazpacho, Bessara - Dried Pea Soup with Cumin and Argan Oil, Chicken Dumpling Broth

Fish Dishes:Pan-fried Squid and Prawns with Harissa, Grilled Sardines wrapped in Vine Leaves with Tahini Sauce,

Vegetable Dishes: Warm Pumpkin and Chickpea Salad with Tahini, Beetroot and Potato Salad with Mint and Spring Onion

Meat and Poultry Dishes: Tangia - Lamb Steamed with Preserved Lemon and Cumin, Lamb Tagine with Peas and Tomatoes, Chicken Fattee with Rice, Crispbread and Yoghurt, Roast Chicken with Preserved Lemon

Even though these recipes are good I would have liked this book to also contain some authentic, rustic dishes that I tried out in Morocco and I know from my Moroccan friends who live in the UK.
