Excellent book! I don't normally cook from recipes, but I wanted to try out the one for oxtail as I'd never cooked it before. It turned out fantastic, meat was tender & fell off the bone & the flavour was delicious. The only words of caution I would add are, do not add all the water at once - if you're using something like a le creuset pot to cook with you won't need nearly as much liquid.

I bought this as a present for my partner who wanted to learn more about cooking Carribean food. It has been a great success as an introduction, there is a good variety of recipes with clear instructions and images. We have enjoyed tasting the flavourful recipes - the okra fried rice is particularly good :)

This is the first caribbean cookbook I ever brought and the best. It's written in an easy to follow, comprehensive style, which I love. Highly recommended to anyone who seriously wants to cook all those caribbean recipes, that your mother and grand mothers use to make with ease.
