EDIT - Answer
To answer my own question.
1Instal SuperUser from the Market.
2 Get SuperUser to check the "binary"
3 Download Terminal Emulator from the Market
3 Follow the instruction here concerning CWM Recovery. http://forum.xda-developers.com/showthrea
Rebooting into Recovery at this stage will take you to a "simple" recovery screen. To navigate use the Vol +and- keys. I didn't get the option to back up at this stage. Use Terminal Emulator to type in the ADB commands directly on your Tab.
4 Download Rom Manager from the Market. Once it is loaded, go to "flash recovery", it will tell you your device is not supported and ask youif you have manually installed a version of CWM2 or CWM3+, ,go for 3+. The options in the app don't appear to work directly, however,....
5 If you go back into Terminal Emulator and retype the command to get to Recovery when it does you now have the option to backup, restore backups and all those other things Android geeks find so invaluable.
