Product Description

This decorative shortbread pan is easy to use and produces shortbread that is delicious, flaky, delicate, and sophisticated. The octagonal ceramic shortbread pan makes 8 triangular pieces of shortbread, two each of 4 stylized wildflower designs. Giftboxed with an instruction and recipe booklet.
To use, spray the shortbread pan very lightly with a non-stick vegetable oil spray. Put a ball of shortbread dough in the middle of the pan and, working out from the centre, firmly press the dough into the pan. Prick the entire surface with a fork and bake the shortbread in the pan in the top third of the oven at 325°F for about 30 - 35 minutes, or until it is lightly browned. Be sure that the middle is thoroughly cooked and doesn't look slightly opaque or the shortbread might stick in the pan. Let the shortbread cool in the pan for about 10 minutes before loosening the edges with a knife and flipping the pan over onto a cutting board. I was so looking forward to baking shortbread cookies with this beautiful mold. I heard that the ceramic ones were the original shortbread molds, and the best. However, I baked the cookies and the first ones came out fairly well although the little flower designs weren't all that prominent. The second batch I didn't bake long enough and when I went to unmold the cookies, they all crumbled and fell apart. I will try more later, but these were for holiday gifts so I didn't have a lot of time to experiment with different recipes. So, although the price is kind of high, it is a beautiful mold. My advise is to not underbake your cookies so they will stay together.

This mold was the first one I purchased back in the 80s, and it is still going strong. In trying to replicate the shortbread my husband came to love while living in Ireland and traveling through Europe, I had tried many recipes and tricks, but without success. Then a little kitchen shop in town got in these molds and I bought one for my husband to give me for my birthday (that's how it works around our house). It did the trick--he loves it, I love it, and so does everyone else with whom we share it. It is so flaky and buttery.
I've served it at wedding and baby showers, a wedding reception, family parties, and I love to give gift plates stacked with shortbread. Since purchasing that first pan I have collected many pans in different designs for different occasions.
The shortbread freezes well, so you can make it in advance of an event and avoid last minute hassles.
The pan is sturdy, and it can go through the dishwasher (a plus in my book). Just read the directions carefully and follow them. Brown Bag also has a website with recipes and tips that is helpful, too.

I love this mold! The pattern is beautiful and the mold has a substantial feel to it. My shortbread come out of it easily. I use Smart Balance margarine, though, rather than butter as I try to cut the saturated fat. They are delicious. Perhaps slightly richer with butter.
