Banana bread is one of my favourite foods of all time. For a start it's absolutely delicious (at least, the ones made from these recipes are!) but even better than that, it's a great way to use up an ingredient that's past its best.
You see, the best bananas for using in these recipes are ones which are over ripe. In fact, they are at their best when they are so over ripe they are almost black – way beyond the point where you would throw them in the trash if you weren't cooking with them.
So banana bread is a feed good food for two reasons – you get to feel good about not wasting food, and then you get to feel good when you eat it!
The problem I've sometimes had in the past, is that some banana bread and banana cake recipes can be rather bland, dry and uninteresting. But about 4 years ago I came across a sublime recipe for banana bread, which I've since used again and again (much to the delight of my husband). I have searched for and tested many, many other banana cake recipes since, and this book contains a collection of my favourite, but the very best – the one I always come back to – is my Brilliant Banana Bread which is listed right at the end of the book. Even if you try none of the others, make sure you try that one. But I warn you, once you have tried it you'll end up making it again, and again, and again...
