Boca do Monte 'Boca do Monte' DO Valdeorras Wine is a bright straw-yellow colour with a notable green hue. Delicate aromas and floral overtones mixed with a mineral, stony character. On the palate the wine is medium-bodied with a tight underlying acidity that keeps it fresh and elegant on its long finish.
The grapes are selected from an area of over 300 hectares of vines, most of which are over 50 years old. The climate here is Mediterranean-continental (with Atlantic influence) consisting of cold winters, warm summers and mild autumns and spring. The soils are either slate, granite or alluvial, with each type imparting different characteristics to the grapes. Slate soils tend to give sapid wines with an aromatic element, are subtle and have a notable mineral content. Granite soils are loose and sandy in texture, allowing for slow ripening which retains good acidity levels in the grapes. These solis tend to add flowery aromas to the wines. Alluvial soils, which extend along the shores of the rivers Sil and Xares, combine with the lime and clay dragged from the slopes by surface runoff. They are mainly loamy in texture, limey and sometimes contain clay a little deeper.
The 2012 vintage in Valdeorras saw a 25% reduction in yield compared to 2011, but has been classified "excellent" in terms of quality. Harvesting was delayed by 2 weeks in comparison to other years due to spring frosts slowing the growth cycle of the vines, but the growing conditions for the grapes were "perfect" and their resulting great health contributed to the quality of the vintage.
The Godello and Palomino grapes were picked and vinified separetely. Only stainless steel tanks were used with temperature control throughout the winery. Once fermentation was complete the wines rested on their lees for 6 weeks to add complexity. No oak was used. The separate wines were then blended in late February to form the final wine.
