Over 25 years I have had 3 Braun hand blenders (original stick x2 and a multipractic whose gearing went west after 4 years of heavy use) and I adored them all, including the dishwasher proof blades,attachments, beakers etc , I hankered after a Bamix for years and when I had the opportunity to buy one, after Braun hand blenders and the ilk seemed to vanish I was happy to buy the best I could afford and have a guarantee of 10 years on he motor etc (important after last Braun).
Thrilled for 2 days only; oh yes it does what it says on the tin and more, lovely - providing you have a Sous Chef to assemble, change blades, clean etc etc. The 4 blades are "interchangeable" providing you remove item totally from any power source (obvious, they are not an attachment unlike the "click and replace systems" which are therefore safer especially for smaller or older users), you must also line up the notch on the blade with the nodule on the stick or the blade will fall off and you go searching in what you are blending. OK, obvious but there are times when you know you have done that and it still falls off, especially in other than cold "things". The frustration when you know you have put it together properly and yet after 18 months to be fishing around slightly cooled chicken livers trying to make pāté but playing "hunt the blade" is a time wasting luxury that really tested my humour, ditto with watercress soup. Don't ask about emulsified sauces, it's quicker by hand than hunt the blade in eggy goo. Fine it can be squeezed with a set of pliers but then the reverse happens, tough to get on/off, danger of cut hands
The mincing blade is very very sharp, but you need protective gloves to put it on the stick and off and unlike the other blades that will fall off or come off easily this needs a bit of brute force and a plaster if you get it wrong. I can't have mistreated the blades they can only be hand washed, infact The whole item is hand wash, which with eggy and pāté and minced herbs, nuts etc is a bit of a draw back and cross contamination is a potential issue here unless using water hot enough to kill bacteria and clean too, oh and of course one handed cleaning as the motor unit is non detachable, heavy and must be kept clear of water.
So evidently not my favourite kitchen product, it's a great shame as it is expensive and the guarantee was important, it plainly does not suit me, seems to have quality faults but I am not bothered to go back through Amazon and muck about for a few weeks getting a resolution. I am going to get a very cheap stick blender today with some vouchers to get me over the seasonal break and then get a new Braun in January. I want to chop fruit, herbs, nuts, make hot and cold emulsion sauces, pātés and soups, fruit purees, veg puréed and the rest, smoothies fun too as is a milkshake from low fat milk, but properly detachable and washable vital for me. Sorry Bamix, not for me and I have tried to like it and am a very experienced cook.
