About the Mill

Milling is the one of the oldest and most necessary craft's. At Bacheldre Watermill we use a blend of traditional skills and equipment with modern machinery to create a range of award winning Organic flours. The grain is first cleaned in our refurbished 'Eureka scouring and separating machine' dating back to the late 1800's before it goes to the hopper above the stone.

The Millers' Tale

When Matt and Anne Scott first visited Bacheldre Watermill, in the beautiful Welsh Marches, it was love at first sight: "We just knew this was the place for us", explains Matt. Having decided to start a new business in the country, the Scotts had planned to work in tourism, and Bacheldre was being sold as a campsite that just happened to have a watermill attached.

"There's been a mill here since 1575, and the idea of keeping that heritage going really appealed to us. The mill was a working museum when we first came across it but was only grinding around a tonne of grain a month. We went into it as complete novices, but learnt quickly. We have increased production as the business has gone from strength to strength, and we have won many awards for the quality of our flour, our packaging and our business. Our success is really down to our attention to detail and the traditional methods we employ for our milling, and also the way we pack it. By stone grinding the flour we retain all the natural goodness and flavours of the wheat germ. Our range of bread, home baking and speciality flours are a must for the home kitchen through to Michelin star restaurants."

There has been a water mill at Bacheldre since 1575 and the current building was built in 1747. The mill was built to service the 500 acre estate of 'Crow Wood' including the hamlet of Bacheldre, it has been mainly used during the winter months, due to the supply of water to the mill, and for such a small estate only a small amount of feed and flour was required.

Today we have grown the business and although we do use motors to turn our stone's, this has been done sympathetically to match the speed that the water wheel turns the stones, we can mill longer in the day, but not faster. We use a green energy supply and we are now working on installing an electric generator to the waterwheel to use the water to create some of the electric required.

I was initially apprehensive about buying a bread mix, as what I like about making my own bread is knowing what goes in it, but having bought Bacheldre flour before, I knew that it wouldn't be full of e numbers. And so, apart from ascorbic acid, it contains the ingredients that I normally make bread with.

Using this bread mix means that you only need to add water as well as butter or oil (optional). I've tried it a few times now using some oil (it says use three tablespoons but I use about one and it's fine) on a 'sandwich' and also on 'french' setting in my Panasonic SD-255 bread maker and it makes perfect bread every time. I bought the pack of ten for my first purchase, but I intend to buy a 16 or 25kg sack next time as well as trying the other mixes.

To recap, if you like to make bread (either in a bread maker or by hand) and want a good quality bread mix to make it even easier, then I can recommend this product.french

I love making bread in my Panasonic breadmaker. There's nothing more inviting than the smell of fresh bread in the kitchen and it makes a simple salad meal a feast! I've experimented with other bread mixes from the supermarket and baking from scratch (with Wessex Cobber Flour).

This product is wonderful. Just the right blend of seeds and grains to give a somewhat crunchy bite in a fluffy background texture, it provides a lovely loaf on the Rapid Bake programme. The instructions on the packet are spot on and the loaf is still fresh a day later.

The Bacheldre flour mixes are absolutely perfect. Buying them in the 500 gram bag may be a little bit more expensive. But, with a machine, you only have to add a little butter or olive oil and 300 mls of water and it produces a perfect loaf over night. There is no other fuss or storage problems. Great!

I live in Spain and it is very difficult to get anything other than strong white flour for breadmakers here, so I was very pleased to find this on Amazon.
I added 3 tablespoons of olive oil along with the water, mixed the dough on a 45 min dough setting in my breadmaker and then divided into portions and left to rise. It produced 8 well risen rolls. Once baked they were softer inside than I expected given the product is called Rustic Crunch, but very tasty nevertheless. The rolls freeze well which is also useful.
I shall certainly buy this mix again and will be trying some of the other Bacheldre products.
