This seeded loaf makes the perfect seeded loaf and has just the right balance of oats, seeds and wholegrains for a satisfying loaf.

About the Mill

Milling is the one of the oldest and most necessary craft's. At Bacheldre Watermill we use a blend of traditional skills and equipment with modern machinery to create a range of award winning Organic flours. The grain is first cleaned in our refurbished 'Eureka scouring and separating machine' dating back to the late 1800's before it goes to the hopper above the stone.

The Millers' Tale

When Matt and Anne Scott first visited Bacheldre Watermill, in the beautiful Welsh Marches, it was love at first sight: "We just knew this was the place for us", explains Matt. Having decided to start a new business in the country, the Scotts had planned to work in tourism, and Bacheldre was being sold as a campsite that just happened to have a watermill attached.

"There's been a mill here since 1575, and the idea of keeping that heritage going really appealed to us. The mill was a working museum when we first came across it but was only grinding around a tonne of grain a month. We went into it as complete novices, but learnt quickly. We have increased production as the business has gone from strength to strength, and we have won many awards for the quality of our flour, our packaging and our business. Our success is really down to our attention to detail and the traditional methods we employ for our milling, and also the way we pack it. By stone grinding the flour we retain all the natural goodness and flavours of the wheat germ. Our range of bread, home baking and speciality flours are a must for the home kitchen through to Michelin star restaurants."

There has been a water mill at Bacheldre since 1575 and the current building was built in 1747. The mill was built to service the 500 acre estate of 'Crow Wood' including the hamlet of Bacheldre, it has been mainly used during the winter months, due to the supply of water to the mill, and for such a small estate only a small amount of feed and flour was required.

Today we have grown the business and although we do use motors to turn our stone's, this has been done sympathetically to match the speed that the water wheel turns the stones, we can mill longer in the day, but not faster. We use a green energy supply and we are now working on installing an electric generator to the waterwheel to use the water to create some of the electric required.

Lovely bread. Nice to find a flour with different grains and seeds yet no Seseme Seeds.

The receipe on the back, however, is a little misleading as the Baking by Hand recipe suggests 9g Dried Yeast which is unusually large. On talking to Bacheldre, who were very helpful, this is because they supply an Organic Yeast which has no additives to make the yeast work faster and hence a sachet is slightly larger than the Fast Action or Instant Yeast normally available in the Supermarket. I am using dried yeast from the supermarket and hence am using normal quantities.

I make my bread using a Panasonic Breadmaker and also found the Bread Machine advise misleading as it suggests using a Granary/Seeded setting. My machines recipe book suggests that Granary bread should be cooked as Wholemeal bread. In fact, again following an email exchange with Bacheldre, it is best cooked using the normal Basic setting. I am very happy using my machines normal white loaf recipe (with supermaket dry yeast), although I think it best to add a little more water (10-20ml) due to the excellant quality of the flour.

I will be trying their Sphelt flour next.

It's a nice flour, which produced consistent results in my Panasonic breadmaker. However, I've reverted to Dove Farm's Organic Malthouse. Firstly, because the flour is better tasting, and secondly there would seem to be a real problem with Bacheldre's quality control. Whilst the flour is advertised as being 1 Kg, in my batch of 8 bags, I never had more than 960 grams in a bag, with others considerably less including one at 895 grams. You have to ask yourself that if a company is so slack in controlling quantity what is it like in controlling quality. As I said, not a bad flour, but would not buy again.

Fed up with commercial bread we have been making our own using any bread flour we could get, a limited choice living on an Island.We are now delighted with bread tasting as it should using this fantastic flour.I have just made a regular order so we can continue to enjoy bread as it should be. Will try some of the other flours at a later date but for now this is the business don't take my word for it try it you will not be disapointed.

Makes a really tasty loaf with a great texture - and works perfectly in my bread machine with my regular recipe. I wondered at first if I'd need to adapt the recipe to use this flour - but then tried my normal 'large white loaf' recipe as this basically seems to be white bread flour with added seeds/oats etc. Well, it worked a treat - delicious bread, and at a great price! Have posted a photo of the flour and of my finished loaf - not to show my bread-making skills (which are probably sorely lacking!) but to give some idea of the appearance of a finished loaf. (Apologies for the big hole left my my bread machine paddle, but my family had eaten half of it before I had taken the photo!) I will definitely buy this flour again!

This is quite simply the best bread flour I have ever used. Try using 600g of this with 200g Bacheldre stoneground wholemeal, 1 9g packet Bacheldre yeast and a little salt. Add a glug of good olive oil if you wish. Make this by hand with warm water and enjoy the lovely aroma of warm porridge when you mix it. Let it rise twice then shape it and let it rise again in the tin. Bake at the hottest your oven will go for 10 minutes then lower the temp to 170C for another 25 minutes. Enjoy!

The packaging doesn't state whether the flour is brown or white; this is a SEEDED WHITE bread flour. It is nice, but if (like me) you want a seeded brown flour then you need to look elsewhere.

I have emailed Bacheldre Mill to suggest they include this information on their packaging.
