Product Description

Rye is milled from a hardy cereal grass and contains less gluten than wheat flour, the gluten is also sticky rather than stretchy. For that reason it wont produce a well risen loaf with out the addition of a higher protein flour. It is ideal for sourdoughs and german and scandinanavian breads.

About the Mill

Milling is the one of the oldest and most necessary craft's. At Bacheldre Watermill we use a blend of traditional skills and equipment with modern machinery to create a range of award winning Organic flours. The grain is first cleaned in our refurbished 'Eureka scouring and separating machine' dating back to the late 1800's before it goes to the hopper above the stone.

The Millers' Tale

When Matt and Anne Scott first visited Bacheldre Watermill, in the beautiful Welsh Marches, it was love at first sight: "We just knew this was the place for us", explains Matt. Having decided to start a new business in the country, the Scotts had planned to work in tourism, and Bacheldre was being sold as a campsite that just happened to have a watermill attached.

"There's been a mill here since 1575, and the idea of keeping that heritage going really appealed to us. The mill was a working museum when we first came across it but was only grinding around a tonne of grain a month. We went into it as complete novices, but learnt quickly. We have increased production as the business has gone from strength to strength, and we have won many awards for the quality of our flour, our packaging and our business. Our success is really down to our attention to detail and the traditional methods we employ for our milling, and also the way we pack it. By stone grinding the flour we retain all the natural goodness and flavours of the wheat germ. Our range of bread, home baking and speciality flours are a must for the home kitchen through to Michelin star restaurants."

There has been a water mill at Bacheldre since 1575 and the current building was built in 1747. The mill was built to service the 500 acre estate of 'Crow Wood' including the hamlet of Bacheldre, it has been mainly used during the winter months, due to the supply of water to the mill, and for such a small estate only a small amount of feed and flour was required.

Today we have grown the business and although we do use motors to turn our stone's, this has been done sympathetically to match the speed that the water wheel turns the stones, we can mill longer in the day, but not faster. We use a green energy supply and we are now working on installing an electric generator to the waterwheel to use the water to create some of the electric required.

As a rye bread addicted household we eat a loaf a day. Sounds impressive until you realise most of the hard work is done by the bread machine.

Love having it delivered to the door on a regular basis without ending up with arms trailing to the ground having humped it back from the supermarket or paid exorbitant delivery charges.

Of all the Rye flours I have used think this is my favourite. When baking 100% rye it somehow seems a tad less brick like (strangely that is part of the pleasure) and a bit more flavoursome.

I have used this Bacheldre Stoneground Rye Flour to make a Rye bread recipe by The Hairy Bikers, I also used Bacheldre Stoneground Strong white bread flour mixed with it, it turned out absolutely beautiful, a mix of a slight fruity/malty taste, I managed to have just 3 slices of this delicious bread because all my friends got to taste it as well and they loved it too, a great product I would highly recommend to anyone that likes to try different bread flours as I do

All bread baking enthusiasts should try this flour. I happened to get some shopping delivered from Waitrose and they stock the bacheldre rye. After using it I looked them up and found out they deliver through amazon. Getting this delivered direct is an excellent idea and the four bag min makes it good value, this really is exceptional and I use the unbleached white as well. Excellent grain in the rye, (due to stone grind I imagine) makes it ideal for 50% or 100% rye loaves and for dusting to get a "bakery" feel to the loaves, or to stop wet sourdough sticking to a banneton. Best flour I have used yet and will keep on using, try it.

I've had this flour for a little while and I'm very happy with it. I use it for my sourdough starter - it has a beautiful fruity smell and tastes great in breads, certainly my best yet.

That said, I'm not sure I'll be buying again. The delivery by Yodel was a day late (no explanation given), and after reading reviews I realise I've been lucky. It could have been that much longer. I'd really like to see sellers such as Bacheldre putting pressure on Amazon to ditch this delivery company, seeing as this will be impacting on their sales.

I hope this problem gets resolved soon as I'll definitely be wanting more of this flour!
