Many Mexican cookbooks provide good recepies, but the flavors seem to be "americanized". After traveling south of the boader numerous times, I have begun to appreciate the real/authentic flavors much more. This book is by far the best on the market for this! I highly recommend it.

I bought this book for my son who had spent 2 years in Mexico and enjoyed the food there very much, he has tried several receipes from the book and says it is brilliant and authentic.

Excellent cookbook. The recipes are the best I've ever found on true Mexican cooking. There is a restaurant in Chicago owed and operated by the authors of this book. You must check it out if you're ever in Chicago.

The cookbook itself is extremely easy to follow. It provides very useful sidebar comments on practical tips and regional variations. This helps make this cookbook a dream!

If you're looking for a Mexican cookbook, there's no better one to be found.

Honestly I was expecting more from this book. Diana Kennedy's books seem to be allot better. I am a chef and work in a Mexican restaurant and maybe for that reason I felt the book was lacking something. It didn't really teach me anything or inspire me as much as I expected. Although the recipes were well written and easy to follow. I wanted more than something I could write myself from a chef I admire so much.

I just finished writing my Plan of Concentration for my Bachelor's degree on the History and Anthropology of Mexican food. I found Rick Bayless' book to be the best source of information on Mexican cooking that there is. He gives background information, clear and easy to follow recipes, and great drawings.

This book has everything you want to know about mexican cooking. Packed full of great recipes and information about ingredients. However despite the quality of the recipes the book itself inside looks very dated. Less than 20 images of the recipes and even though the illustrations are helpful im sure pictures would be even better. The dated layout out is very cluttered and ugly and desperately needs a re-design. But dont let this minor fault put you off what is a very good and substantial mexican cookbook.

I am a third and final year culinary student at a college in Columbus, Ohio. I've read a lot of texts and cookbooks in my life. I wanted to take the time and get online to comment on this book. I see and buy a lot of cookbooks that give you the good recipes but very little knowledge of the foods that you are cooking and how they will react to the processes that you will be putting them through. Five stars to this great piece of writing.

I was not disappointed by this item. Bought for a friend's birthday gift, it contains lots of authentic and easy to follow (although not at all boring) recipes. It includes some some photos, although not many (but better than none). Would recommend to anyone wanting to try some nice exciting and authentic Mexican!!

This is by far the best Mexican cookbook that I have read.Totally spot on. Anyone into Mexican food should buy this book, its all you will ever need.

Hardly any photos in this book, which is so lazy. Not being from Mexico, would love to see what I'm cooking. I hate cookbooks with no photos. Considering this is an anniversary edition, they should've sprung for a photographer. I returned this book and got 'truly Mexican' which is a bit better, for photos anyway. When you open this, it looks like one of my grandmothers cookbooks.
