More About the Author

I was born at home on a small farm in Provo, Utah, in 1939. The picture of me going for a daily bike ride was taken on July 4, 2010, at age 71. The picture by the river was taken in Breckenridge, Colorado on August 12, 2010.

I graduated from college in 1962 with a Bachelor of Science degree in Mechanical Engineering and became a registered Professional Engineer in several states. My career included positions as Chief Mechanical Engineer and Director of Engineering. In 1985, I started a home-based consulting engineering firm, developed and marketed engineering software worldwide, and created a non-denominational Christian website based on dispensational theology named Bible Life Ministries. The website also includes a scientific approach to health and nutrition.

My extensive 10-year scientific study of nutrition, health, medicine, and human physiology gave me a depth of knowledge rarely achieved even by those educated as professional nutritionists or earning more advanced Ph.D. degrees. Physicians are usually not good sources for nutritional advice because they receive very little nutritional training in medical school.

My research revealed the shocking truth that officially-promoted nutrition, as taught in universities and sponsored by government agencies, is nothing more than brainwashing with myths, distortions, and lies. The USDA Food Guide Pyramid has no connection with scientific facts.

Over a period of three years, I monitored an Internet message board that specialized in digestive ailments. Although the diet promoted on the message board provided some help for the sufferers, it was severely deficient. Three or four of the 1000 members recognized that numerous foods from the acceptable list were actually offensive, but the organizers of the message board quickly dismissed their reports. These three or four people restricted their diets enough to enjoy a reasonable remission from Crohn's disease and ulcerative colitis. The diet promoted by the board's founder was wrong, and the remaining 99.6% continued to suffer.

The proper diet required to prevent harsh autoimmune reactions is generally not recognized by gastroenterologists (physicians who specialize in digestive disorders) who continue to recommend dietary fiber that my research revealed to be the main culprit. The high-fiber diet makes patients' health worse -- not better. Hence, many gastroenterologists have given up recommending dietary changes to their patients and rely solely on drugs, which are intended to destroy the immune system rather than stop the offenders -- fiber and carbohydrates.

My research has also revealed that our society has been brainwashed with false information on nearly every topic of concern to our everyday lives. Discovering the truth is the connecting link between the title of this book and nutrition, health, medicine, science, and religion. Yes, a strong connection exists between brainwashing, religion, and diet in our society.

I placed my research information on a website that received 3,000 to 4,000 visits per day, and I provided my email address to give the visitors a chance to share their personal experiences. This is directly opposite to the attitude of most physicians, who simply don't want any feedback from the patient. The feedback from the website was a perfect confirmation of the research information. Dietary fiber is a sinister invader of the colon, not the panacea of health promoted in other books, websites, universities, and government health departments. Fiber is a bad dude. Carbohydrates were found to be as bad an actor as fiber. There are no good carbohydrates as popularly claimed. Some carbohydrates are bad and the rest are dreadful. I will provide scientific proof to support my statements.

Kent Rieske and his wife, Marti, began eating organic whole grains in 1994. They purchased grains directly off the farmer's truck at a local natural foods store. Marti baked delicious bread from the home-ground grain and made a seven-grain muesli cereal. The diet was in accordance with the USDA Food Guide Pyramid, but it nearly killed both of them. This is an unusual book which has many conclusions which are so different from other books dealing with health 'cures'. Either the author has come across some amazing findings which most others have missed or he is going down the wrong path. I am not sure what to make of it as far as the diet information is concerned. I would like to see more references to published research. I suppose the only way to see if it all adds up is to try these diets out - which I may do, although the list of forbidden foods tends to put me off trying it for now. I am not trained in science or medical subjects so I don't feel qualified to make judgements about the effectiveness of many of the ideas contained in the book. It is however an interesting read.

This book starts out as really great. I am talking about the part of the book (most of it?) that covers DIET.

Obviously a lot of research (and experience as a chemist / food researcher) discovered... well, really, not anything new. This dietary information has been known for centuries. Ever hear of William Banting (... "a formerly obese English undertaker - 1798 - 1878 - who was the first to popularize a weight loss diet based on limiting intake of refined and easily digestible carbohydrates. He undertook his dietary changes at the suggestion of Dr. William Harvey, who in turn had learnt of this type of diet, but in the context of diabetes management, from attending lectures in Paris by a Mons. Bernard... Current Low-Carb author Gary Taubes' recent study of carbohydrates, Good Calories, Bad Calories, begins with a prologue entitled "A brief history of Banting" and discusses Banting at some length. Discussions of low-carbohydrate diets often begin with a discussion of Banting."

And then of course their is the famous and highly popular Dr. Robert Atkins who began his Low Carb revolution in the early 1960s. So Rieske's diet "discoveries" are simply repeated information... but still VERY GOOD information, and right on the mark (although I don't see why he emphasizes wanting to develop the carb-free ultimate diet and yet basically every picture has asparagus in it - granted, very low in carbs, but then so is celery - raw, steamed, friend, etc.). And I agree with him wholeheartedly (not just in opinion but in extensive research that I have done) about the body NOT needing glucose (in fact, according to the scientific site [...] - and Wiki - "Carbohydrates are a common source of energy in living organisms; however, no carbohydrate is an essential nutrient in humans".

I even however appreciated seeing - as I have in other literature - the facts about how antibiotics and hormones are mandated to be taken off an animal's regimen before it is slaughtered in a time period that will allow the antibiotic, hormone, whatever to be cleared through the body's excretion system BEFORE the animal is slaughtered.

BUT... speaking of repeated information, that is where the book starts really going downhill. Way too often there is repeating of the same information over and over. I don't know if the author wanted to "fatten up the book" so he could price it higher, or if he assumes that most of us are imbeciles and need to have charts and lists repeated again and again so that we will "get it".

Then the second half - or last third - of the book suddenly turns weird - IMHO - I have researched many of the topics of which he speaks and have found none of them to be true. No such thing ass evolution? Or that the speed of light DECREASES with great distances? He completely blew it with Hubble and the "red shift theory" -- which was actually NOT initially developed by Hubble! Although widely attributed to Edwin Hubble, the law was first derived from the General Relativity equations by Georges Lemaître in a 1927 article where he proposed that the Universe is expanding and suggested an estimated value of the rate of expansion, now called the Hubble constant. Two years later Edwin Hubble confirmed the existence of that law and determined a more accurate value for the constant that now bears his name[7]. The recession velocity of the objects was inferred from their redshifts, many measured earlier by Vesto Slipher (1917) and related to velocity by him. His comments that we must be bunpkins to believe that we are - once again - the center of the Universe - as the Hubble shows these galaxies moving AWAY from us at an accelerating pace (notice "us") just completely his ignorance. Since the Hubble Scope is located "here" that is the specific observation that he shows... but the Theory and then the Law in fact reveals that ALL galaxies are moving away from EACH OTHER (put the Hubble Scope in orbit around another planet in another galaxy and it will show the galaxies moving away from THAT location at an accelerating speed... DUH! He also goes back and correct Einstein at a couple of places... I kid you not - this guy knows more than Einstein!)... And then I started noticing two things. Biblical scripture inserted into the text where the author could take segments of chapter and verse to make it sound like what ever he wanted to interpret it as - which made since once I found his web site [...] and how often (I lost count) he named theories, laws, physics, etc. Everything was "Reiske this" and "Reiske that" to the point that I found it embarrassing - almost like he wanted at least ONE of them to be right so that he could depart this plane with SOMETHING named after him! (See note 1)

But due to its quasi-scientific, quack science, biblical influence "facts", I will allow the reader (See Note 2) to (a) see if they can make any sense of what he says, (b) find ANY corroborating REAL research, and (c) make up their own minds.

What I specifically want to cover is back in the dietary section. Again, I agree with his focus content pretty much 100%. But there are some major mistakes even there.

1. No real new information. Nothing in here that I haven't read in 5 or 6 Atkins books and a handful of other Low carb and Ultra Low Carb books. (Some do encourage a moderate amount of fiber, but many others do not as they focus on meals of meats, fish, seafood, poultry, eggs - of which there is no fiber than I can find!)

2. Again, the repetition angle. That bothered me.

3. With his emphasis on enzymes, probotics, etc. I was stunned to see that the author specified to NOT drink kefir milk (as it was a fermented liquid made from yeasts and bacteria from Kefir "Grain"). First of all, there are very good, exceptionally good yeasts and bacterias that not only are good for our body, but that our body could NOT live without (we have MORE good bacteria in our intestines than we have cells in our entire body!). Kefir is made from these types of HIGHLY POSITIVE yeasts and bacterias. Secondly, there he makes it sound like Kefir is made from some GRAIN source. They are simply called Kefir "grains" because that is what the smaller versions of the active component looks like until they begin fermenting --- by eating LACTOSE, the SUGAR in milk! As they grow, they look more and more like small bunches - very small - of cauliflower! Regular Kefir consumes about 70 - 75% of the Lactose in the milk it ferments. When Kefir is put through a second fermentation process (or extended fermented process after initial and newly grown grains have been removed for the next batch), after 2 - 3 days of this extra fermentation the Kefir Drink (no longer "Milk") has basically ZERO carbs (actual measurements of quarts of second ferment Kefir have shown zero to 1 carb per quart!). And then the caution to NOT eat "Kefir yogurt"????? While referred to on certain layman sites online, there really is no such thing as "Kefir yogurt". They are two completely different fermented milk products, with completely different production processes. Really fell down on the research there.... Or is it a matter that historically one of the discoveries of Kefir came from the Caucasus and made its way then to Russia and from there around the world, that another legend of the discovery of Kefir came as a gift from the Muslims to their neighboring tribes and states where it again spread eventually into Russia, etc. from there.

4. And then the caution against Heavy Cream and Heavy Whipping Cream because "they may have this" and they may have that" (just like you are way off base with shutting down Decaf Coffee and Decaf Tea... the majority of brands - which you can find easily about them online or calling the company - use the ethyl acetate extraction method; like Folgers for example. Ethyl Acetate is a minor compound found in our bodies naturally, processed by our bodies naturally and found most prevalently - but still in small amounts - in ripened fruit... tests by a Coffee Review and Rating Site of numerous brands showed that a person would have to drink over 500 cups of Folger's decaf to equal the same amount of ethyl acetate in one fully ripe banana - again, so much for your vaunted research).... but back to the Heavy Cream and Heavy Whipping Cream. I have 2 of one and 1 of the other in my refrigerator right now. Both list as ingredients only "Cream". According to food database networks, an 8 ounce cup of cream has 6 1/2 grams of carbs per cup. Now what is the difference between eating 6 grams carbs in asparagus (or broccoli or whatever vegetable-wise) with a meal - or drinking 6 grams of carbs in cream with a meal (instead of the asparagus)???

Funny, as I started this, my rating level was 3 stars. As I progressed with the problems that I had with it (poor research in many areas, repetitiveness, many areas where it was - or so seemed to me - simply opinion or unconfirmed "facts"), this rating went from a 2-star and then ultimately to a 1-star.

Interesting how perspectives change....

Note 1: Whatever happened to Christians of strong faith? Scriptures like: 1 Samuel 2:3... Romans 12:16... Proverbs 21:4... Psalm 101:5... Proverbs 26:12 (one of MY favorites in these cases)... Psalm 101:5b... Proverbs 18:12... Isaiah 5:21...

Note 2: Having had some thoughts about this book and its very title (see Note 1), I looked first for this book at my local library (part of a 4-library district network). No luck. I then went to the Regional library network online (that our system belongs to - and which covers well over 30 libraries in a large Metropolitan region, and not even counting the main city public library and its 15 or so satellite libraries which are all part of this network system). Again, no luck. Well, this Regional Network System "???Net" is also connected with other Regional Networks (numerous ones) across the country. One can request a search through these connected Networks and put in a request - if any found - for an "Inter Library Loan" (ILL). After several weeks from my initial request, my local library called and advised that in ALL of these Regional Networks across the country (easily with hundreds and hundreds and hundreds - thousands? - of libraries), they were only able to find TWO copies and that both were available for an "ILL" so they were requesting from the closest one!

I am 57 year old and have bought his book Absolute Truth Exposed and Reversing heart Disease and preventing diabetes. Both books are full of information and very interesting to read. In Absolute Truth Exposed he also talks about "rightly dividing the Word" for studying the Bible. It is great to have a scientist who also believes in the risen Jesus Christ. But getting back to the diet, I am following his gudelines pretty closely except the fact that I do eat nuts. Basically I eat meat and nuts. I eat as much as I want. ALL my numbers have improved greatly after following his plan. This includes taking the vitamin B3 Niacin 3 grams a day. I had a heart attack in August 2012 and had my follow-up in February with my cardiologist. He said to keep doing what I am doing because my numbers look great.

This was a very insightful book about how we have been very misled for years regarding proper nutrition. Carbohydrates, especially refined sugars, are truly very destructive to health but cardiologists and dietitians continue to point the finger at cholesterol and saturated fats for our poor state of health. I felt like the diet advice regarding low carbs, high fat/protein intake and the use of coconut oil was very sound and well researched information.
However I am still skeptical about the need to take so many vitamins and minerals....I felt like that was overkill and there wasn't really enough evidence in the book to support that. I think it could potentially be dangerous to take that many supplements.....or just make very expensive pee. I lean more toward the latter.

I also still think that grass-fed beef and organic produce is healthier than not. I just really have a hard time believing that all of those chemicals is not harmful in some way. I do agree that to some extent what is labeled organic may not actually be legit. You have to be very careful. Otherwise, this book changed my eating habits tremendously. I use a lot of coconut oil and eat eggs for breakfast daily. I have lost weight and feel healthier than I ever have. My husband also has crohn's disease, which is why i read the book to begin with, and the low carb diet really helped him a lot. He's in remission, no longer takes medication, and just had a nearly normal colonoscopy. It is absolute truth!

People don't like it when their sacred cows are turned to hamburger.

Kent Rieske's book "Absolute Truth Exposed" is the book that grinds up deeply held beliefs. Its not for everyone. It is only for a courageous few that are willing to re-process their paradigms.

I felt compelled to ask myself "How did I arrive at my conclusions" as I read this book.

Kent writes like your favorite Grandfather would: conversationally, simply and to the point. What he doesn't tell you directly is that he has years of hands-on experience in each of the complex subjects he addresses.

The difference between Kent and many other scientists that speak to the same issues is that he presents the facts with the wisdom of those years.

PLEASE read this book. And be prepared to be challenged, even offended, for no-one will finish the book unscathed.

However if you implement his wisdom you will have more life.
